Without a doubt, tapas-based food is one of the most ingrained gastronomic traditions in Spain; tn its strictest sense, it is an aperitif that accompanies the drink and has itinerant consumption, from local to local. It is said that the origin of the word stems from the fact that it covered the glasses of wine with a piece of food in the old taverns, to prevent the flies from entering.
